Takohiki Damascus

The Takohiki is, in short, a sushi sword.

It is built for the cutting of larger fish and their preparation and portioning into sashimi or sushi.

The smaller version of a Japanese Oroshi hōchō up to 1500 or 2000 mm long that is used in Japanese fish markets for whole tuna.

The bevel is either left or right one-sided or symmetrical also called double-bevel.
